The Winery Castello Ducale is managed by the INNSTORE S.r.l. estate and rears 10 vineyards hectares, between Castel Campagnano (Caserta) and Solopaca (Benevento district), in Campania.
The vineyards are included in I.G.P.(acronym for protected geographical indication), Terre del Volturno areas, and in D.O.P. (acronym for Denomination of Protected Origin), Sannio Lands. The grapes are harvested by hand in boxes and vinified in the cellar during the same day. The fermentation and storage occur in stainless steel tanks at controlled temperature.
The Aglianico , for the reserve, is fermented for 30 days in cone-shaped wood vases.The refinement occurs in new oak barrels in the cellars of the Castle for 6-15 months,where the temperature is at 13°c throughout the year. The reserve is also aged in the bottle for another 6 months.
The packaging system is done with filling and labeling automatic machines, with a numerical lots control.
